    The well dressed chef

    Since I have no photos from yesterday's sky dive I thought I'd post this one of my delicious banana bread.

    My culinary skills are fairly limited. Until a couple of weeks ago my repertoire consisted of poached eggs on toast and sandwiches. The recent additions are pancakes and banana bread. Both incredibly easy.

    If you'd like to make your own banana bread this is the recipe I used. It takes about 10 minutes to prepare then you just bung it in the oven.

    Banana Bread Recipe

    Ingredients

    * 3 or 4 ripe bananas, smashed
    * 1/3 cup melted butter
    * 1 cup sugar (can easily reduce to 3/4 cup)
    * 1 egg, beaten
    * 1 teaspoon vanilla
    * 1 teaspoon baking soda
    * Pinch of salt
    * 1 1/2 cups of all-purpose flour
    * Bag of chocolate chips (my addition)

    Method

    1. Make sure you're wearing a suitably cool T-shirt (available at all Wishbone Ash gigs)
    2. Preheat the oven to 350°F (175°C).
    3. With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl.
    4. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix.
    5. Pour mixture into a buttered 4x8 inch loaf pan. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.
